    Paring Knife question

    This .070 AEB-L santoku has a 7.5 inch edge. It warped both lengthwise and edge to spine. I didn't have too much problem with the lengthwise warp but I chased the the other until it disappeared. That means it it thin.

    I sharpen on the slack belt behind my small wheel attachment with the belt in reverse. And slow! On my grinder (Bader3) holding the blade level the angle of the belt puts me between 15-17 degrees per side.

    Because I've been kicked around by the blades last week (bendy san mai & Damascus delam) I decided I needed to do something different. I needed a dedicated pin peening hammer. I have had the head for 20 + years but needed a handle. Polished ball and a Koa handle. 3.22 oz.

    After heat treat as ground the blade is still bendable. No surprise. I broke it in the vise. It snapped like you expect. The surprising thing is I sharpened the remaining 1/3 of the blade and it holds a good edge. Nothing I could sell. But after beating a piece of walnut it still shaved hair.

    That was kind of what I was thinking. It sucks though. Totally not a product I could put forth to a customer. And I have several pieces. It's in the temper oven so we'll see if it changes.
