For about thirty dollars you can try it for yourself - steel vs ceramic. Go on Amazon and get a Mora #2 and also a ceramic knife, each for about $15. Then go perform some tasks you envision in your bugout scenario.
Of course, the Mora isn't stainless but that's beside the point. The Mora is one hell of a good knife for the price, about the same price as a ceramic knife from the grocery store. The Mora will destroy any notion of ceramic being equal to steel. Then consider that any quality stainless knife will outperform the Mora. The funny thing is, people have used knives for eons before stainless steel was invented. You can, in fact, use a non-stainless steel knife and there will be no consequences. The rust forms a patina that protects the blade. Instead of fighting it to keep the knife shiny, let nature take its course. A carbon steel knife will outlive us both.
