What is your favorite knife handle wood?
and second favorite if you have one...

First: Dessert Ironwood either burl or straight grain
Second choice: Black Ash burl
 
1st--- Spalted Maple (nice dark spalting) 2nd---- Claro Walnut(super figured)

For the record this is a tough survey. there isn't much wood i don't like almost as much as 1st + 2nd place.....
 
Oregon Maple Burl first and Ironwood burl second. However, like most of the comments above, I like a number of burls including Rosewood and Redwood just to name a few.
 
#1-Desert Ironwood
#2-Anything super curly. (Koa, Maple, Mango, & Ash)

I have to add that for shop tools and hard users I always reach for Bois D' Arc/Osage Orange. I call it natures Micarta.
 
any extremely rare burls examples would be chittum, cocobolo, diamond willow, yellow cedar, and osage orange. If it is almost impossible to find and it is a burl I want it.
