Mesquite burl and Amboyna burl

Another vote for African blackwood. I also love masur birch, when I can find it.

first would be all the different maples: plain, ambrosia, spalted, burl, birds eye
second would be all the different oaks: red, white, spalted, burl

My favorite is Walnut, but a close second is Hickory. (Old ax handles make great hidden tang knives)

Koa and Ironwood are at the top but there are so many awesome varieties of wood out there. I have quickly developed a wood addiction
