Folks talk about gut hooks and I don't really like them. As Kevin was speaking of that drop point helps. I have seen those who are good at dressing a deer and the will get the point started at the rear and take two fingers to place on each side of that drop point. The knife is then inserted edge up and they run up the length of the animal like a zipper being zipped open. It takes practice and a steady hand but it is as fast and efficient as any gut hook ever thought about being!! Refence the link!

That’s the way I do it, I prefer a pointy knife like the camper but with a swept up point like some skinners, two finger method prefects the point from rupturing the intestines and stomach, I like a smaller knife for my work
 
That reminds me of an old Solingen knife, like this one!! 1532665734341.png However I have never seen a Solingen that did not have the leather washers and the spacers at both ends of the handle. So the pic you got says it probably is not a Solingen knife!!

It looks like it may have been sharpened quite extensively. What you are about to do it a act, that will not be forgotten!! Good for you!!
 
Maybe the classiest thing you could do would be to follow Grandfathers knife style with a modern flavour if he has been happily using it till now..

It's a Case knife. I looked it up. I found a old one from the same time period. It was not much money. In very good condition. We talked about getting that. She wanted me to make it. Yes,,, I don't know what he used to sharpen that blade but he got happy. Not much left of it.

I thought about that. I guess I didn't want to take anything away from that blade. At this point I can only hope he likes it.

Back in the day, a lot of folks use coarse water stones. They cut a quick edge on a carbon knife but, they also take away a lot steel quickly! When I was a kid it was not uncommon to see these! Most had a stone of medium grit but I have seen them with a coarse grit. They would do some grinding in a short while you peddled away!! s-l1600[1].jpg
