Fun sharpness tests...

Here's some quick little vids of some fun sharpness tests. I don't think they mean much except your edge is pretty sharp with good geometry. But it's fun and hard to stop.

First is some rolled up single phone book pages. Then a thick catalog. Then some single page slices.

I use the last test you did with the paper folded over, but not creased. I try to cut ovals out of the paper.

Love the videos! I thought my knives were sharp, now I have to go relearn my sharpening skills...

There was one chefs knife I wasted a lot of time sharpening. I cut an empty 12 gauge shotgun shell in half with it, without tipping it over. Edge was pretty fragile though, but it was fun to see how far I could take it. I’d never put that kind of an edge onto something for sale, it’s way too weak.
