I wrap all my stainless material to prevent decarb. Those get plate quenched.
I believe you can oil quench stainless steels but the aluminum plates work well and they help to prevent warping.

I have found that when I start having problems with grinding, the best thing to do is go get a fresh belt.
Maybe it's the three minute break, maybe it's refocusing my thoughts, maybe it's the fresh abrasive, but things almost always get better.
I don't keep a detailed shop log, but I do record my heat treating procedures and what the results are in terms of HRC numbers and amount of warping I get.
I also take pictures of most finished knives.
Mistakes seem more apparent in a picture, and it usually makes me feel better if I can...

I have used Peters, but to make it cost effective you need about 20 blades or more.

If I were you I would get some AEB-L, which is popular right now, or an old standby like 440c.
Both of those make great knives.
I would stay away from the more exotic alloys while you are learning.

I don't think you will be able to properly heat treat any type of stainless in your forge.
