Would this setup be proper for verifying temps on my tempering oven which is just a table top baking oven? Or do I just need a thermometer?

I will certainly work for that purpose. Most of those type ovens only reach 550F as a top temp..... so if you can't find a common thermometer that goes that high, you may be forced to go the pyrometer route.

The second TC input will read ambient temp if you leave one of the TCs plugged in. You'll also need a high temp probe, either the one Ed linked to or you might try this one: https://www.amazon.com/dp/B00XJ0VUBG for $10 shipped. I used one for a while before it burnt out. I left in forge all the time and perhaps too much in direct flame and that's too much for the bare probe. If you wish constant monitoring you can put inside a ceramic sheath and I expect it would last longer. BUT, for full time monitoring I use this: https://www.ebay.com/itm/392548176128? but I still use a ceramic sheath like this:

The TC I linked to is a AWG#8 wire which makes it a tad slower response time, but does make it last longer. For faster response time and I think would last pretty good inside a sheath the SS probe I linked to for $10 should work nicely.
Whatever you use be sure to keep the TC/probe/sheath out of direct flame or it WILL burn up fairly fast.
