All those choices look like commercial knives - I suspect most folks on this site will have made their own.... at least the knifemakers anyway.
 
I buy Calphalon from Ross dress for Less for about 80% off....I have between 30-50 kitchen knives which I consider my R&D for knife making...(Emeril's knives are not as well made but cut real well) so, prolly one o' them two...And while we're having Turkey...I'll be smacking down on tavern Ham!

KenH, yessir that is a production knife of a Southern Grind spider monkey. I am a big fan of their production knives as they are well made and donate funds to a childrens camp in Georgia. They are also low production and I have noticed the quality is fantastic. While I am giving Thanks to God this holiday season, I am thankful there are companies like this in our communities- turning out high quality products/services while supporting their neighbors and the up and coming generation. Win-win!
