Tempering

Instead of using the wife’s kitchen stove to temper my 1095 and 15n20 will a convection toaster oven do the trick or should I just use a normal nonconvection toaster oven? The convection types seam to be a little larger.

I'll be watching this thread, I'm thinking of getting a convection oven myself.
my wife lets me get away with a lot but I kind of shudder to think what might happen if I told her I was going to start tempering my knives in HER oven, Ha ha.
currently I use my heat treat oven or a toaster oven from the 70s.

I think a convection oven would be fine. The moving air eliminates hot spots. So if the temperature is calibrated it should be good to go IMHO.

Yes...convection. No to regular...not heating even enough. make sure you have a couple thermometers in there.
