Rope Tobacco cutter blade

I have a friend that is opening a Cigar/Pipe Lounge. He has an antique Rope Tobacco cutter hes restoring. Its missing the blade in it and I have no idea how it should be designed. I do have the shape as the space for the blade is defined. My question is do I make the blade bevel only on one side or both? Was hoping someone on here would know.

I've seen, and made them in both types..... with bevels on both sides, and with a single bevel. For single, the bevel is on the side opposite the hole/where the cigar is inserted. Most of the higher quality ones have an adjustable stop, and a single bevel. The mid and lower end ones, or those that are production models, tend to have two bevels, and a non-adjustable stop. (for speed and ease of manufacture)
