Organizing a Central Mo Knife Show lots of ?

I hope this is the place for this.
I have alot of time on my hands, for the next 6 months, due to having back fusion surgery. So I am researching having a small knife show in central Mo. A friend and I have been talking about this for a few years now, but neither had the time, well now I do.
My questions are,

How much insurance is enough?

How do I reach makers to see if there is enough interest?

I would have it in our community center building, and have room for around 80 8 foot tables. What are some ways to best advertise the event to the public?

I am thinking of offering a knife for a drawing, to all attendees who register at the entrance, no cost to register, just pay the admission fee. Does this sound like a good way to attract the public?

Also what is a fair admission? I don't want to make a profit from the show, but do need to cover all cost of it, I think the show will be fun, and alot of work, and help promote custom knives in the area.

Also, what do you think of some demos, like some bushcraft, or sharpening, knifemaking, sheathmaking?

Any help will be appreciated,
