Been spending some time in the shop lately working on a few kitchen pieces, and this one came out especially nice.
We just added the Bonito Pro BMK-715, a 7-inch Damascus utility/chef knife. It uses 1095 + 15N20 Damascus at 352 layers, with an octagonal rosewood handle and black ferrule. It is one of those middle-size kitchen knives that makes sense when a chef knife feels too big but a paring knife is too small.

We also put together a Damascus care and sharpening guide because carbon Damascus gets treated a little differently than stainless. The main thing is pretty simple: keep it dry, don't leave it sitting in a sheath, and don't take half the blade off when sharpening it.

We're a small shop in Memphis and still enjoy the old-fashioned part of this work, so if anyone here wants to talk steel, grinding, heat treatment or kitchen knife geometry, happy to compare notes.
