Hi everyone! I'm from Sardinia and we have a good tradition in knifemaking. I've been making knives since I was 15, that said I've always used the same 2/3 steels I knew (mainly 1084, 1095 and 12c27)
I've recently tried 80crv2 for a couple of builds but I'm a bit confused here
Like this knife below ( stainless steel handle with buffalo inlays) has been normalised 3 times, quenched in p50 and tempered twice. I had 61/62 HRC on the scale, however my usual sharpening method doesn't seems to work as good as on the other steels I always used.
I've tried to stop at 2k grit on the stone, it give a inconsistent burr, barely visible (is not as big as 1084 for example) at the same time is tough to remove, doesn't come out easily.
I've tried wood, I've tried stropping with leather ( with and without diamonds paste)
I've tried bringing it up to 3k grit...but still I'm no satisfied with the cutting performance.
It's a 3mm blade, hollow grind, should fly through anything...but it doesn't.
Any suggestions?
