Yep, Parks 50 is one of the best quenchants for 1095, which is the steel you want to heat treat for in a 1095/15n20 damascus. Brine, a 10% salt water solution works exceptionally well, but you risk cracking blades for sure. If you can't find a commercial quenchant that is fast in speed, like Parks 50, you can get by with canola oil warmed to 130F. If you go with the canola route, and your knife is much thicker than 1/8", you might not get complete through hardening, as canola isn't the best for 1095. If it's 1/8" thick or less...you can get by.
