Cut off disc for profiling blanks?

I havent bought a bandsaw yet so im wondering Would using an angle grinder and a thin cut off disc to cut out blanks be a bad idea?

People always talk about overheating the metal, but does it even matter how hot it gets before heat treat? Or does it depend on the type of metal? I know stainless air quenches, so maybe it would be n danger of partially hardening after/while cut out. But I'm new, so this is all speculation.

I figured as long as I didn't let the edge get roaring hot while cutting out a blank I would be ok.

But, I don't wanna do it, put hours into finishing the knife to find out I have an edge that won't hold.

Lots of folks use cut off discs. You are correct about the possibility of "work" hardening occurring, but it will not effect it to any great degree. Another option would be to purchase stock that is "just right" for your template and grind off the excess metal with a worn 36 grit belt.
