So there were really only 4 emblems you would be assigned as crew on the Enterprise. Command, Science, Medical and Engineering. I wonder what emblem a forger or a knife maker would wear.

Kirk is also a good example of the fact that Command cadre can’t be knifemakers. Remember when he had to go down to the planet to fight the alien dinosaur commander? The dinosaur made a knife. Kirk ran around collecting reloading components to make a bamboo zip gun.

They relied to much on phasers to need knives and all their food came from replicators pre-cut up in nice bite size pieces.
