You have no worries. The only way to mess up your temper is to EXCEED that temperature. Feel free to cook it as long as you want at 250 without harm. -Josh

Steel question... 1084 or 5160 as my one steel for all knife sizes? 10" plus too

Go with 1084 for several reasons. 1. It won't require or benefit from a soak held at an accurate temperature like 5160 , O1, or any stainless. This is important to achieve consistency right off the bat. 2. It is available in a wide range of thicknesses to suit your needs. I don't believe...

    Ht 5160 ?

1525 soak for 10 minutes to harden temper 375 for 2 hours twice. That'll make you a fine knife. I give it a soft back draw after tempering. Also done twice. -Josh

    cork belt ?

No problem. Here's what S.R Johnson has to say about breaking in a cork belt. I did similar just didn't use compound and soaked the belt in water first. http://www.trugrit.com/cork_belt_break_in.htm -Josh

    cork belt ?

Frank, I did the initial break in by pushing a piece of 1080 barstock flat against the belt running full tilt for a few minutes. This more flattened down the cork than turned it smooth like you're thinking. It still has a coarse appearance in comparison to your typical belt. I wouldn't...
