Not sure about function, but I think the doublesided looks better. That way no matter what side you hold up you get to see the bevels

I have a forney and it works fine. I wouldn't call what I do welding, more like "I can stick 2 pieces of metal together". I don't "weld" enough to justify a more expensive unit and I can grind off the splatters. Once you get it, you will find reasons to make things. I made a wood burning grill...

I have a mig non-gas unit that uses flux core wire and it definitely doesn't have the cleanest welds. You can grind off the "splatters" and it's a little less trouble/expense than having gas.

I tape my blades for sharpening. I use the Ken Onion Worksharp and if you don't tape you will get small scratches. The thing works great but it can scratch a blade

Yeah, no need to peen on wood. In fact, if a pin is too tight on wood scales it will cause the wood to crack later (ask me how I know! ruined a beautiful set of amboyna scales). Now I have the pins so they can easily slide in holes through both sides. Then lotsa epoxy!
