I agree with .050 as a starting point. I've been using the .070 as I prefer the look and i'm also able to squeeze bearings into .070 without cutting blade pockets.

Don't powdercoat, most of that requires a 400 degree cure temp. I use cerakote NOT THE AIR CURE!!! Air cure is only about 60% as durable. The oven cure can be baked at 200 for 2-3 hrs to achieve the same effect, about what all of my vehicles interior gets here in the deep south...

Hate to bring back from the dead, but thought I should warn that some powdercoats cure at 450-470. It may be something you want to check as it May adjust your temper up too far.
