Fred,
It takes a few to get the hang of tall full flats on knife. Some of one are 3" tall.
I drop down in grit size and do a few more passes to smooth out any dippy do's. Another technique is to roll the blade just slightly on the platen as you get toward the cutting edge giving you a slight con vexed contour and smoothing things out.
The proof is in the cutting & chopping.
