Here are four oyster knives I finished up today. L to R: Honduran Rosewood burl, same, Australian burl, Honduran Rosewood burl and Gaboon Ebony. Brass bolsters with copper pins, shop-made mosaic and brass pins as seen, stainless thong hole liners. 440C stainless all, about Rc55 so as to be tough as well as hard. They'll go out with leather blade covers.
