some basic knives for the kitchen. top is 5 1/4" x 2 1/2" cleaver, maple handle, 3/32" O1. small paring of 1/16" O1, maple handle. small cleaver of 1/8" O2, maple handle. larger paring of 3/32" O1, maple handle. heat treated here at the ranch, after temper they all checked at Rc62 using the hardness tester at the office. handles finished with gloss polyurethane.
i am trying to use the KISS rule, keep it simple. edges are straight with no curve. grind is a modified scandi, no secondary bevel. all but the small paring have handle shaped to keep knuckles off the cutting board. there are no edges or corners on the handle, with a two finger grip you don't notice the handle. both the paring knives work well off board, like capping strawberries or eyes off potatoes. blades were finished with 320 non-woven Hermes belts.
