Pairing knife

Honestly it depends on how she uses the knife. First, throw out the image in your head of the $2 paring knife every mom has had in the kitchen since 1972. (The one with the 1.5” long blade with the recurved edge.)

Paring is cutting in the hands off the board. Usually pulling the blade into the work, but not always. But the key idea is that the knife lays in the crook of the fingers so that you can use both hands to manipulate the work.

One of the most highly regarded paring knives of all time is the Shun paring knife.

Many people prefer to pare with a 4 inch Petty. It’s also a more versatile knife because it can be used for darn near everything.

Is that OAL or just blade?
 
Just think Granny wants that entire bucket of Peaches peeled and you better not leave any meat on the back of that peeling. Also Granny will tell you if you can't peel it where the peeling is one continuous ribbon well,...…………. there is something wrong with you or the knife!! And she knows it is not the knife because, Granny can do it when her Arthur is not bothering too much!!

Oh yes, it better than any other forums of trying to dig threw loads of BS that have nothing to do with or so little to do with what you are trying to learn, like google and other search engines. Don't get me wrong it help some times but it is much faster and easier to ask people who have been there and don't it than spend hours to find someone with even a remote idea of what your wanting.
