Oak as a knife handle unpopular?

I think spalted or Burl oak makes a nice handle. I have used both that have been stabilized.
I just saw a machete type knife that had a Handle made from a stave from a whiskey barrel - looked pretty cool.

I did a handle from a whiskey barrel stave a few years ago. The whiskey had permeated the wood and the grain picked up some color streaks from it. It made a nice handle, but the most interesting part of it was that it was a whiskey barrel stave. Very nice, very subtle visually.
