Any idea of the steel? What Rc hardness? I'd think those are a couple of questions most folks would like to know... BUT, perhaps the name Neil Kamimura Chef Knife should tell me something? Well, I did a search on the name, and I do see they are a VERY expensive knife, but still didn't mention steel or Rc - Looks like he's in Hawaii and forging so I'm "assuming" they are hi-carbon rather than SS?
