How did Paul do this edge?

Just ask him- Paul is very approachable and always been willing to pass on his knowledge. It is rough side outside and stitched then folded over to give the finished side coming over the top. That is how I see it.
 
Chef, it's a little bit involved for a written explanation but basically it's like Mike said. Mate the lining and the sheath up grain side to grain side and stitch around the mouth and up the loop to the tip of the loop. Trim of the excess around the area that was stitched and then apply cement to both pieces on the flesh side and roll the lining back over itself exposing the grain side of both pieces as shown in the linked picture in your first post.
