hi,
this a cleaver i am just finishing. The blade is 6" x 2 1/2" x 1/8", Aldo's1084, Rc 61-62. The handle is flowering dogwood, at 6" it is a little bit long, will go to 5" on the next one. The design is in the style of a "Chinese Cleaver" in that the edge is beveled about 9 degrees per side, giving a total angle of 18 degrees. It is a slicer not a chopper. It has passed the carrot, potato, cheese, and boneless meat test with no issues. The blade is heavy enough that on some vegetables all you have to do is guide it as the knife will cut thru by weight alone.
