That's a lot closer to the setup I'd imagine myself using. I am curious how you cut the thinner/smaller serrations. Is there a sharper wheel on the other side?

New tools are rarely a bad thing, and that one looks like doozy! Whether or not I'd pick one up for serrations would depend mostly on the cost of entry, and even then, how often I'd try to use it for serrations would be questionable. I imagine you could do it just as well (and probably faster...

A file guide might help. You might also try saving the plunges until closer to the end for final cleanup. Part of your ability to do that will depend on how stable your grinder's tracking is while grinding toward the edge of your platen or wheel. Also, make sure you're using a fresh sharp belt.

BTW, the knives (and sheath) look really good. Don't be afraid to round those handles a bit more. I'm sure they feel pretty good as is, but they look like they'd feel better with a little more curves. I don't know about anyone else, but my boners always feel better when they're a bit more round...
