Damascus and High Carbon Steels are not food safe -- aka the Jay Fisher Rabbit Hole

Wow...I agree. Knock 10K off and he might have a winner.

    Burnishing 3-4 layer edges

That sounds promising. There is also Fiebings Gun Tragacanth. Which slicks the leather edges to prepare for edge finishes. I just leave it as is. Though there are various colors of edge finishes to really make things sparkle

    Grinding position

I think it would be worth a try. I've tried grinding from my shop stool a couple of times with mixed success. If I can get my grinder to tilt that way I may try it.

    Belt progression

I usually do my initial grinds with 60, 120 and 220. At 220 I send out for heat treat or heat treat in my forge. After that I'll usually start with 320 then 400 and 800. Sometimes I'll stop at 400 and hand sand from there. I usually keep belts longer than I should. But once they start to glaze...

My Ortur 10 watt diode laser is sufficient to leave a nice mark on AEB-L hardened to about 61-62 that won't come off easily. I made a mistake on one of my knives with the laser. After sanding with 220 for about half an hour to clean it up, you could still clearly see my mark. Though it was much...

I was looking at the lines going cross-wise...I thought that's what you were referring to. Guess I was wrong.

That will do anything you want, and more by a large margin. However, unless I'm missing something your budget was $500.00 I looked on the Ortur website and that appears to be twice that much. Or did I miss something? Others should chime in soon.

I bought the Ortur LM2 because it was on sale. So far I've been fairly happy with it. Though I couldn't get it to work with LaserGRBL. Which is the free software. Instead I've gone with Lightburn which is $60.00 and then I think $30.00 per year after that. For $500 you can get almost any current...

That's what kept happening with my etcher. I tried replacing several parts twice and finally it lost its smoke. So same reason. There's a bit of a learning curve. But not too much.
