Building a 2 wheel grinder...

almost none on the drive wheel, maybe a 1/4" radius on the edge. The drive wheel just wants to be flat and a little wider than the tracking wheel to allow for tracking adjustment.

tracking wheels often have a few degrees radius/crown but I had someone call me the other day to tell me when they turned some tracking wheels and left them flat they worked out well.
 
Yes, flat drive wheels and even the tracking wheel. If necessary you can crown the tracking wheel with ordinary masking tape that will probably last a year or more.

Hi Mike I have built 4 two wheel machines and I put a 2deg a side crown on my drive wheel and dont have a problem tracking
