good morning,
2 knives i finished that are now in use as paring knives. steel is Aldo's 1084, 1/8", @ Rc 61-62.View attachment 35131

handle of upper knife is spalted maple from my front yard with 5 coats of floor grade polyurethane. handle of lower knife is dogwood from neighbor with 4 coats of floor grade polyurethane.
both work ok on green pepper, onion, and sausage.
