My Aunt has asked me to make her a pairing knife. What features do I need for a great pairing knife?

Is that OAL or just blade?Honestly it depends on how she uses the knife. First, throw out the image in your head of the $2 paring knife every mom has had in the kitchen since 1972. (The one with the 1.5” long blade with the recurved edge.)
Paring is cutting in the hands off the board. Usually pulling the blade into the work, but not always. But the key idea is that the knife lays in the crook of the fingers so that you can use both hands to manipulate the work.
One of the most highly regarded paring knives of all time is the Shun paring knife.
Many people prefer to pare with a 4 inch Petty. It’s also a more versatile knife because it can be used for darn near everything.
Ok so what about handle length?blade length. sorry. In the kitchen knife world the “length” is typically the length of the cutting edge.
