few questions about sharpnening/ness

hey guys

here goes

1 can blades get dull by themselves in storage? if so why/how to prevent it?

2 i do my sharpening and resharpening on my grinder (200, (or directly to)400, then strop belt on grinder with white polishing compound), any suggestions for 'manual' resharpening or higher level of sharpening? like stones and such? i have the tri angle but i'm not that happy with it

2.5 sometimes knives get so sharp i get surprised! couple of times i even removed hair before realizing the knife touched my body. any idea why or how that happens? or to be exact what prevents it from happening every time?

3 i get sharper edges on V grinds than i do on chisel, shouldnt be the opposite? (i do secondary edge on both)

some thoughts
#1 I see blades getting dull in storage by corrosion or rust of the edge. make sure knives are cleaned before storing, maybe a light film of mineral oil to prevent corrosion.
#2 I use my grinder to sharpen, but also use two manual methods. I use norton crystalon and smith's diamond stones, with the finest being about 800 grit. my blades are Scandi grind, only one bevel per side, so it is easy to hold the blade at the proper angle. I mark the edge with magic marker to make sure they are even. the other manual method is mousepad/sandpaper. I have several pieces of rubber, from soft to firm. #2.5 i have had the same happen. we must have found the right combination of angle and bevel and all the other pieces that make up a sharp edge. I need to try and remember what was done on that blade so I can do it on every blade.
#3 not sure on this one. just finishing my first 2 blades with single bevel.
