Another new guy question

So I'm about ready to set up and start filing on my bevels. But that, as with most things it seems, leads me to a question.
How thin should I go on the edge? I've seen alot of answers, everything from about .015, up to .030 or more. Given that im working without a grinder, I'd really like to do as little material removal post HT as possible, but heating with a coal/charcoal forge, and being inexperienced, I'm also thinking getting a good, even heat isn't the most likely, and that could cause warping. ..
Just looking for some advice...
 
I get to the thickness of a nickel before Heat Treat and down to a dime before sharpening. I use a Moran edge and most of my blades are 5 to 6" long. Knives OAL around 11".
