I got to the 1880 deg was letting it set, went in the house for 30 min while it soaked went back to the shop and looked at the temp and the temp was 1600 deg and dropping, found one of my elements had broke . so I took the knives out plate quenched them and now tempering them Will they be any good?

my guess is almost certainly no. that is pretty far away from austenizing temp.
do you have an RC tester?

I don't have a hardness tester, I'm about to that I am going to just buy a new oven one large enough to actually do a knife.
