Edge testing

Anyone have a good method for testing the edge after ht and tempering? I can shave with the edge and chop but I dont know how to test the edge to get a good idea how tough it really is.
 
Lots of different ways... Whittling on dry oak will let you know if the heat-treatment is good, and will tell you about the geometry also. Cutting manila rope along side a blade of known quality is a good one. If you really want to get brutal, chop brass with it and see how it holds up.... whittle on a nail... I recently heard of the 'penny chop' which is exactly what it sounds like. Baton it through coat hangers. Really though, you want a comparative test along side a control blade of known quality to really get any empirical data from your testing. A chopper has a different set of criteria than a skinner, also...
