12C27 for fillet knives ?

Hey everyone, I'm looking to start making some fillet knives, my go to steel for hunters - skinners has been CPM154 but I can't find that in thin barstock. after looking around I'm thinking about using 12C27, that's easily available. has anyone here used 12C27 for fillet knives and if so, what are your opinions of it, or any other stainless recommended. the problem I have is I don't have a surface grinder that will do anything longer than 5" [ folder blades ] so I have to find commercially made thin stainless. Thanks.
 
I don't see why it would be a problem. I've made a few from some .070 thick AEB-L that seemed to work ok.
 
I have had good success with the 12c27, seems to hold an edge quite well; and it sure is handy to get it in the thinner pieces.
 
I should have one done in a couple weeks. I have a friend that runs a charter boat so he'll give it the field trial.
