I've used VSM and Blaze without trouble. Do watch for build up on your platen that can mess up flat grinds.

I have use structured belts as well such as the Norax so I don't see why Gator belts wouldn't work? Mostly you want belts with a cloth backing. Paper will cause problems when wet.

From my experience, limited as it is, I have found that Gator belts don't cut well when damp or wet. I dry the blades after dipping in water.

I used AcuCool 1975G from these nice people.http://www.anglerindustries.com
I used a 3 to 1 of water to Accucool and put it in an old windex pump plastic bottle. It makes a mess! lol.
You may want to put a fender/mudflap on the drive wheel of your grinder. Others have built a Gutter trough along the bottom that use constant drip system.
