I personally believe ELMAX or even M390 is your best choice here. Both hold an edge better than S35VN and are easier to sharpen. If it's cutting performance youre after go with M390. Elmax is a little tougher and is great for hard use and really both steels are extremely tough IMO. As far as...

I need a good serviceable nitrogen dewar! Prefer one with at least a 2" fill hole but willing to discuss anything if it's the right price and it is safe. Also need a good hardness tester that is accurate. Let me know what you have! Thanks

Ok we have the handles about 95% complete. Have some scratches on the knife I need to clean up but then we are ready for heat treat.
