welding/grain growth

Ok, so after my first (horribly failed) attempt at making some 1095/15n20 damascus, I remembered that getting the steel too hot
causes grain growth. So my question is How do you reduce the grain size after forge welding? Just normalize it?
 
You either multiple normalizations or quenches. The thing is to get the steel just hot enough throughout to austinize then cool the steel. Grain growth with forge welding a billet of damascus is unavoidable. You just have to correct the large grain after you're through welding.
