Good All Around Steel

Sam I would say 440C grinds nice and takes a very nice high polish. The last 4 knives I've made were D2 and it eats belts and can be polished to mirror but takes more work.
 
440C is so 1980! ;) For stainless, I prefer Carpenter CTS-XHP, with Crucible CPM-154 a very close second.

If corrosion-resistance isn't a big concern, it's hard to beat O1. Won't hold an edge as long as XHP or CPM-154 by a long shot, though.
 
I get real good results fron ATS-34. And have seen Jim Coffee put a sick polish on O-1
