Here's a chunk of Walnut we are laying up for counter tops. It will measure 120" x 30" x 3" thick when done. I look at it and think of chopping it up for knives.

Why would anyone use nice wood for a countertop when they could use marble? Nice wood should be saved for the guys (knifemakers) who will use it for its best intended use (knife handles).
 
That's big than my 10" 2X12 black walnut! I bet that there are a few cut offs that make it into knives.
 
Wow. I think we have a winner here Steve. That is huge. What are you going to finish it with? Is it purely decorative or do they actually cook in this kitchen?

Although this pic doesn't show the finish well, it sports 6 coats of Waterlox.
We also built the cabinets.
